本研究以台灣地區上市上櫃之餐飲業相關類股，從證券櫃檯買賣中心產業價值鏈資訊平台所列餐飲業相關二十八家企業，在近十年掛牌上市上櫃企業中主要經營業務為餐館業、餐飲服務業、餐飲銷售和餐飲連鎖加盟業及燒肉飲食服務業的八家企業做為研究對象，以個案公司在台灣證券交易所公開資訊觀察站（簡稱公開資訊觀測站）已公告年報中財務報表各項資料，使用個案分析法進行分析，從五大指標：財務結構、償債能力、經營能力、獲利能力和現金流量，分析十九項財務比率，探討個案公司2019年無COVID-19疫情前之經營績效，以及2020年和2021年受COVID-19疫情影響下，財務結構及經營績效的影響變化。
以五大指標分析八家個案公司經營績效，研究結論如下：一、財務結構：以八方雲集(2753)及漢來美食(1268)較佳，王品(2727)及豆府(2752)較差。二、償債能力：以豆府(2752) 較佳，王品(2727) 及天蔥(2740) 較差。三、經營能力：王品(2727) 較佳，瓦城(2729)、天蔥(2740)較差。四、獲利能力：以八方雲集(2753)較佳，天蔥(2740) 較差。五、現金流量：王品(2727)較佳，天蔥(2740)較差。

In this study, 28 companies related to the catering industry listed on the OTC-listed catering industry-related stocks in Taiwan are listed on the Industrial Value Chain Information Platform of the Securities Over-the-Counter Trading Center. Eight companies in the restaurant industry, catering service industry, catering sales, catering chain franchise industry, and barbecued meat catering service industry are selected as the research objects, and the case companies have been announced in the Taiwan Stock Exchange Public Information Observatory. The various data of the financial statements in the annual report are analyzed using the case analysis method. From five indicators: financial structure, solvency, operating ability, profitability and cash flow, 19 financial ratios are analyzed, and the case company is free from COVID-19 in 2019. Operating performance before the COVID-19 pandemic, and changes in financial structure and operating performance in 2020 and 2021 due to the impact of the COVID-19 pandemic.
The operating performance of the eight case companies is evaluated by five indicators, and the research conclusions are as follows: 1. Financial structure: Bafang Yunji (2753) and Hi-Lai Foods (1268) are better, while Wowprime (2727) and Tofu Restaurant (2752) are worse. 2. Solvency: Tofu Restaurant (2752) is better, Wowprime (2727) and Mr. Onion (2740) are worse. 3. Operating ability: Wowprime (2727) is better, Thai Town (2729) and Mr. Onion (2740) are poor. 4. Profitability: Bafang Yunji (2753) is better, Mr. Onion (2740) is worse. V. Cash flow: Wowprime (2727) is better, Mr. Onion (2740) is worse.
