台灣餐飲市場的未來展望,根據未來流通研究所分析,2020受到COVID-19疫情的衝擊,台灣連鎖餐飲業歷經2001年後少見的大衰退,Q1與Q2整體營業額分別較前一年同期衰退6.5%與9.4%,打破連續18年正成長趨勢造成營運及獲利極大的影響。 行政院主計總處已於2021年2月20日上修全年台灣經濟成長率為4.64%,創近七年新高。隨著疫情共存及疫苗擴大施打,餐飲市場將恢復正成長。據國發會資料統計,台灣已於2018年進入高齡社會,推估2025年時將會成為高超齡社會,人口結構的嚴重老化將對社會及產業帶來深遠引響。另一方面,於1990年代末至2010年代初之間出生Z世代,從小生活在數位化環境下,具有創新而務實的個性、追求多元價值於道德認同的特徵,在2020年底已佔台灣總人口的15.83%,已陸續進入社會職場。再加上2019年底開始的全球COVID-19疫情,也讓消費者的自我保護意識更加強,對自我需求的主張更明確、品質要求更高,可以預期消費需求將更多元,讓台灣本已競爭激烈的餐飲市場更快速更迭。 本研究應用策略分析的工具,例如SWOT分析、產業五力分析、數位轉型等,以國內餐飲服務業Qburger為個案,藉由深度訪談法、參與觀察法及次級資料分析法等研究方法,探討「後疫情時代餐飲創新之路」與「數位服務轉型策略」。 日新月異的科技讓生活更加便利,改變消費行為,消費者轉至線上、忠誠度不高,對以實體起家的零售、餐飲業造成衝擊變、尤其2020年全球爆發COVID-19後,各行各業遭受到前所未有的挑戰,消費者的價值觀與消費型態轉變,加速了餐飲和零售板塊的轉移;值得慶幸的是,為了維持市場競爭力,許多企業順著此波數位趨勢的變化,紛紛導入科技應用以掌握消費者脈動,為產業成長注入了新動能。 數位科技應用重塑了消費者購買決策的過程、支付等消費環節,複雜又多變的需求及科技不斷迭代下,餐飲服務業將迎來新一輪轉型升級的機會,多元支付、發票載具、外送平台串聯、APP點餐的快速發展,產生許多新商業模式。 |
Abstract |
According to the analysis of the Future Circulation Research Institute, , Taiwan's catering market was affected by the COVID-19 epidemic in 2020. Chain stores in catering industry experienced a rare recession after 2001. Compared with the same period of the previous year, the overall revenue in Q1 and Q2 declined by 6.5% and 9.4%.The epidemic broke the positive growth trend for 18 consecutive years, which has a great impact on operations and profits. On February 20, 2021, the General Accounting Office of the Executive Yuan revised the annual growth rate of Taiwan's economy to 4.64%, the highest in nearly seven years. With the coexistence strategy of the epidemic and the rising coverage of vaccines, the catering market will return to positive growth. According to statistics from the National Development and Reform Commission, Taiwan has become an aging society in 2018, and is estimated that it will become a super-aged society in 2025. The serious aging of the population structure will have a profound effect on society and industry. On the other hand, Generation Z, born between the late 1990s and early 2010s, has lived in a digital environment since childhood. They has an innovative and pragmatic personality, pursues multiple values, and moral identity. By the end of 2020, Generation Z has accounted for 15.83% of Taiwan’s total population and part of them have gradually entered the social workplace. In addition, with the global COVID-19 epidemic that started at the end of 2019, consumers have become more aware of self-protection, have a clearer proposition for self-demand, and have higher quality requirements. It is predictable that consumer demand will be more diverse, which makes the competitive catering market in Taiwan has a rapid change. This research applies the tools of strategic analysis, such as SWOT analysis, industry five forces analysis, disruptive innovation, and digital transformation, etc.. Take the domestic catering service industry, Qburger, as a case. Through some research methods, for example, in-depth interview method, participant observation method, and secondary data analysis method, etc.,to explore "The Road to Catering Innovation in the Post-epidemic Era" and "Digital Service Transformation Strategies". Digital technology application has made life more convenient and changed consumption behavior. Consumers have moved to online and have lower loyalty, which affects the retail and catering industry that started with brick-and-mortar. Especially after the global outbreak of COVID-19 in 2020, various industries have faced unprecedented challenges. Consumers’ values and consumption patterns have changed, which has accelerated the transfer of the catering and retail sectors. Fortunately, in order to maintain market competitiveness, many companies have followed the wave of digital trends and introduced technology applications one after another to grasp the pulse of consumers. It has also injected new momentum into the growth of the industry. The application of digital technology has reshaped the process of consumers' purchase decision, payment, and other consumption links. Under the changing needs and technology, the catering service industry will usher in a new round of opportunities for transformation and upgrading. The rapid development of multiple payments, invoice carrier, delivery platforms, and ordering APP have created many new business models. |
