社會型態改變、多元飲食文化的需求,讓台灣的餐飲市場蓬勃發展。但是,COVID-19疫情嚴重影響餐飲業的經營方式;如何滿足這些餐飲客戶的需求、解決客戶痛點,提高客戶黏著度,是商用廚房設備產業突破業績的一大要點。 本研究透過五力分析、SWOT分析與商業模式分析,檢視商用廚房產業的競爭態勢,個案公司的優勢、劣勢與機會、威脅,並分析個案公司現有的商業模式,從中找出創新的商業模式。 經由整個論文的研究分析,本研究跳脫供應商思維,從客戶角度去審視餐飲業者對商用廚房設備產業的需求,並從客戶需求角度去思考改進公司的經營模式,藉此擬定了未來的創新之路。 |
Abstract |
The changing social structure and the demand for diverse dietary cultures have led to a vibrant development of the food and beverage market in Taiwan. However, post-COVID-19 pandemic, it severely affected the operational practices in the F&B industry. Meeting the needs of these F&B customers, addressing customer pain points, and enhancing customer loyalty are key strategies for achieving breakthrough performance in the commercial kitchen equipment industry. This study utilizes Five Forces Analysis, SWOT Analysis, and Business Model Analysis through literature review to analyze the competitive situation of the commercial kitchen equipment industry, the strengths, weaknesses, opportunities, and threats of the case company, and to examine the existing business model of the case company in order to identify areas for improvement or innovation in commercial kitchen equipment business models. Through the entire research and analysis in this paper, the study goes beyond supplier-centric thinking to look at the customer demands of F&B operators towards the commercial kitchen equipment industry, and from the perspective of customer needs, it considers improving the company's business model to pave the way for future innovation. |
